This local blue cheese is made right in our back yard by the Miller family. They've been milking Holstein cows for twenty years and have been making artisan cheese since 2006. This raw milk blue is an earthy, natural cheese with a pleasant balance of creamy paste and blue veining. More to the mild side in the world of blue cheese, this example has sweet notes of caramel and goes well with lighter reds and sweeter white wines. Also pairs well with dried fruits.

Another wonderful cheese from a wonderful forth generation family dairy farm, Vermont Ayr is an alpine-style/tomme cheese that is mold ripened in a humidity and temperature controlled cave. Vermont Ayr is made with raw Ayrshire cows milk. The cows are pastured fed on 150 acres of timothy, clover, brome and alfalfa. The cheese is delicate, subtle and creamy and really reflects the quality terrior.
